Ingredients

Directions

    Crush the mint, pineapple chunks and brown sugar in the bottom of a shaker.

    Add the rum and shake with ice.
  3. 3
    Strain in a highball glass filled with crusched ice.
  4. 4
    Complete with pineapple juice and stir.
  5. 5
    Garnish with a pineapple chunk and mint.

This was a very good drink, but you have to like mint flavoring in your cocktails. I love pineapple & drink rum all the time, but the mint was too strong for me. Enjoyed the one drink & so did my husband, but probably won't make again because of the mint. Guess Mojitos just aren't my cup of tea (or rum). Made for ZWT5.

    I made this a virgin way. Its refreshing with the mint. To replace the rum I used about 1 tbs fancy molasses, omitted the brown sugar because it was already sweet enough and I used more pineapple juice. Photo posted, and yes I know I didnt use the proper glass. Would make again. Thanks! Made for ZWT5 for Cooks With Dirty Faces.

    I really enjoyed this refreshing drink. I love pineapple so I knew I would like this. A great drink to serve anytime! Thanks for sharing.
