Pineapple Casserole

This side dish recipe is sooooo easy! Just 5 ingredients. It goes great with ham and pork. I've even made it on Thanksgiving.

SERVES 12 (change servings and units)

Ingredients

  • 1/2 lb butter, softened (1 cup)
  • 1 cup sugar
  • 6 eggs

  • 2 (20 ounce) cans crushed pineapple, undrained
  • 12 pieces white bread or whole wheat bread, toasted and cubed

Directions

    Preheat oven to 350.
  2. 2
    Beat together butter, sugar, eggs.
  3. 3
    Stir in pineapple and cubed toast.
  4. 4
    Pour into ungreased 13" x 9" pan and bake for 45-50 minutes or until top begins to brown.

What a surprise, I made this as a side dish for a vegetarian friend on an unexpected visit. This is a type of fruity French Toast and while the first bite was rather a surprise, it quickly grows on you and we both polished off two slices each and she was keen to take the leftovers home too. I can totally imagine that this would go well with meat, and my half sized version of the recipe went a long way too, whilst still being easy to make. Please see my rating system: 4 lovely stars for a recipe that is very tasty and that I will have pleasure in making again. Thanks!

    Delicious! I made this to go with posk chops, though it would go beautifully with ham. I cut the recipe in half - so easy to prepare!

    So good! So easy to make and so few ingredients. This is also good cold. I plan on making this for Thanksgiving and a brunch later. Great recipe. Thanks so much for posting.

    I made this dish for an Easter crowd of 22 people, and every one of them said they loved it! Delicous served with ham, but I will try this with pork as well. Very simple to make and it turned out fantastic. Don't let the odd sound of this recipe deter you from making it, they will love it. Thanks for posting!
