If there are any leftover muffins, refrigerate them in a covered container and serve them cold. They're even better!

    Preheat oven to 425 degrees.

    Spray muffin cups with nonstick spray or line with paper cupcake liners.
  3. 3
    In a large bowl, sift together the flour, baking powder, baking soda and pudding mix, then stir in brown sugar.

    In a separate bowl, combine the egg and sour cream.
  5. 5
    Fold in the pineapple and oil.
  6. 6
    Add the egg-pineapple mixture to the flour mixture and stir until moistened.

    Batter will be thick.

    Bake at 425 degrees for 15 minutes.

Great tasting muffin. They did taste better once refrigerated. I mixed the sour cream, eggs, oil and the pineapple in the food processor to mix it smoothly. Will definately make again.

    I only used 1/2 cup brown sugar,as you know I don't like things sweet- LOL, I used 12 jumbo liners in my muffin pan and baked for 20 minutes. I thought 425° would be too hot but they were great. I love the pineapple flavor and so does DH. Thanks for a tasty recipe.

    Was disappointed as the ingredients looked very good. Little flavor, and the texture was not what I expected from sour cream muffins, barely mixed in the liquids, but still not smooth, almost coarse. Sorry, but probably won't make again.
