Creamy and tropical, this classic drink is perfect for Hawaiian and Caribbean parties as well as summertime entertaining.

SERVES 1 (change servings and units)

Directions

    Place ingredients in blender, reserving pineapple chunks for garnish, and process until smooth, about 10-15 seconds.

    Pour into a chilled glass and garnish with reserved pineapple chunks, if desired.

    This was a very tasty late night drink that I just served on the rocks. I did have to add more pineapple juice, 3 ounces. I like my drinks on the weak side. Thanks Sue, the next time I make this I'll use the blender. Made for the Recipe Swap 17 game 2008 in the Aussie/NZ forum. Our group was Erica Group 8

    Cant beat this one, this is my favourite cocktail, smooth and creamy, visions of sitting in the tropical sunshine (after a couple of these!) Thanks Sue L.
