Pierogies and Kielbasa Skillet Casserole

Yumm, kielbasa, cabbage, and pierogies all in one skillet. Couldn't be easier and is wonderful. You can use any kind of pierogi and I used low fat kielbasi and pierogi. You can also use mini pierogis.

SERVES 6 (change servings and units)

Directions

    Chop onions and saute in butter in pan or electric fry pan. Add cabbage, cover, and cook till soft (about 10 mins). Sprinkle with pepper.

    Slice kielbasa into 1/8 inch thick slices. Add to casserole. Cover and cook another 10 minutes or till kielbasa is cooked.

    Meanwhile, cook pierogies either by boiling or microwave. (follow package directions) Drain.

    Add pierogies to casserole and stir. Cook an additional 5 minutes.

    Loved it. I am used to Southern cooking, and this is a little off that beaten path, but it was soooo good. Pierogies are like a Southern "dumpling" with a filling. FABULOUS. I followed the recipe exactly (with another tablespoon of butter once the cabbage was introduced to the pot), and my ususal suspects (friends and relatives who pay homage to my "test kitchen" raved over this recipe. Now, I am ready to experiment with peirogies. Thanks Artsy.

    Hi Artsy Chef, what a great meal! We had it the other night - we were having foods from different places - and I wanted to present the pierogies, not alone, but with other foods. I made the recipe almost exactly as posted, but I used butter instead of margarine & added grated cheddar on top. I cooked the defrosted pierogies in with the cabbage. It was awesome! We used to serve pierogies with just butter sauce and nobody would eat them so, we tried this and it worked! How about that! Thanks for posting, Diane

    I made this recipe it was awesome I added a few twists to it being from the south I need spice in my life...lol I added frozen 3 pepper and onion mixture from Kroger. I added more than a sprinkle of pepper i sprinkled then stirred then again...I added season salt a little then when i added the pierogies I peppered and season salted again it was wonderful....Yeast rolls are good with it too.
