I literally live on this in the summer when tomatoes are garden-ripe! I prefer this to cooked salsa, and I really load up on the cilantro. Of course, you can adjust the heat and any other ingredient as you wish, but this is the basic recipe. Serve with your favorite tortilla chips. Hope you enjoy it as much as I do!

2 1/2 cups (change servings and units)

Ingredients

  • 4 ripe plum tomatoes, seeded and finely chopped
  • 1 small white onion, finely chopped
  • 1/2 cup cilantro leaf, chopped (or more to taste!)
  • 2-3 jalapeno peppers, seeded and finely chopped
  • 1 tablespoon lime juice
  • salt

Directions

    Combine all ingredients; cover and refrigerate for at least an hour.

    This tastes best the same day that it's made, but is okay the next day.

    very good! definitely use at least 2 jalapenos and dont forget the salt like i did, I also used the juice of a whole lime. Making it again today and am going to try shallots instead of the white onion as i found the onion a little bit over bearing for my taste.

    This Pico De Gallo is extremly good I made it one week ago 8/28/2009 and I am makeing it again today 09/04/2009 it was really impressive.

    This recipe takes me back to high school...my boyfriend was Latin and his mother taught me to make her secret recipe pico de gallo...it was amazing! I remember she would make huge batches of it and use them as decoration in her Latin inspired kitchen. Every single time I was at that house there was a pot of Mexican rice on the stove...there for anyone who wanted it; anytime. And for special dinners, we would make homemade tortillas...delicious! Thanks for bringing up such a happy and cherished memory! Oh, since no one here knows her...her secret ingredient was lemon juice instead of lime and lemon pepper...just a tad! Linzi
