I am so glad to have found this recipe. I saw this done on Martha Stewart's TV show by her Persian friend. It is a bit complicated but so worth it when you taste the results. I add turmeric to the potatoes so they turn bright yellow and crusty brown! Serve it with a Persian meat stew it's awesome!!!!
