Have made this twice to rave reviews. I did slide a little "better than boullion" beef paste under the fat layer on top and added about 1 T. or two of au jus to the salt to make it the texture of snow which was easier to pack on as a crust. I also reduced the end cooking time to 40 minutes since my hubby likes med--rare. Perfect!

I made this last weekend with a 5lb rib roast. I followed the recipe exactly except, like most others, used prepared horseradish instead of the powder. I thought the flavor of the rub was very good but my only complaint is that my roast was way overcooked, which may be my fault. Like well-done overcooked. I put it into the oven once it reached 375, cooked for 45 mins then let it sit for around 3 hours. Then I turned the oven back on and let it cook for another 60 mins. The extra 15 mins was to allow the oven to heat up but I think that may have been my undoing. Overall, a good recipe though.

I served a 12-lb. bone-in prime rib last night for Christmas dinner (8 guests). I followed the recipe EXACTLY. All I can say is "AWESOME!!" I even taped a sign to the oven "DO NOT OPEN"....Time between cooking sessions was 3 1/2 hours. It was perfect. Just a note to those of you who have had trouble finding the horseradish powder: It is easy to find under the name "wasabi" powder, in the spice section of most super-markets. I was skeptical but it worked. We did a 4lb prime rib roast - have not heard of horse radish powder so I just applied creamed horseradish almost 1/4 cup to surface of roast. Combined rest of the spices but only used 3 tbsp as sufficient to cover roast. Was I suppose to use it all??? Anyhow followed cooking instructions and roast turned out perfectly the way we like it - med rare (leaning more to rare). The time between cooking at 375 was 2 1/2 hours sit and I did not peek but I did turn the light on to look thru oven door.MMMMMMM
