Perfect Microwave Rice

A different way to make Perfect Rice in the microwave. I didn't believe that it would cook till tender without being covered, boy was I wrong.

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    Place all ingredients except salt in a large microwave safe bowl.
  2. 2
    Rice doubles in size during cooking so choose a container large enough to accommodate final product.
  3. 3
    Microwave uncovered on high for 10 minutes.
  4. 4
    Then microwave uncovered on medium-low for 15 minutes.
  5. 5
    Do not stir rice at anytime during cooking process.
  6. 6
    Season with salt and fluff with a fork before serving.

Worked perfectly! I followed the recipe as written. We used half for dinner and I froze the other half. Made for Fall PAC 2009.

    I halved the recipe and it came out great. I just reduced the time a bit--8 minutes + 10 minutes. It came out nice and fluffy, which was a victory for me, the queen of sticky rice! Thanks for sharing.

    I made your microwave rice recipe for my dinner tonight and was I impressed. I've always had good results with the "OLD" method but I thought, what the heck, I'll try it this way and I'm so glad I did. I made brown rice, just my preference, and it was perfect.I didn't have a problem with it boiling over, it was not clumped up, well, it was perfect.!! Of course I had way too much but I put it the freezer, so no problem. Thanks, Ridgely. It's a keeper. I'll never go back to my old way again.

    This came out perfect! I had printed out this recipe some time ago, but necessity required my trying it today — my stovetop died. I used water and it turned out great. Will definitely keep broth around for the next time. Since this was a first attempt, I cooked the recipe as is, to see how it would turn out. (Guess we'll have rice pudding tomorrow, with all of the leftovers! HA!) Next time, will halve the recipe. I'll use this a lot — sure is nice to free a burner up when you're cooking!
