This delicious recipe came from my sis in law and turns out perfectly every time and is soo easy to make! I get many requests for this recipe.

SERVES 40 (change servings and units)

Ingredients

    In a 2 quart saucepan combine sugar, corn syrup, water, and salt.

    Cook to hardball stage, (260 degrees), stirring only until sugar dissolves.
  3. 3
    Meanwhile, as temperature of syrup reaches 250 degrees, beat egg white till stiff peaks form.

    When syrup reaches 260 degrees, very gradually add the syrup to egg whites, beating at high speed with electric mixer.

    Add vanilla and beat until candy holds its shape, 4-5 minutes.

    Stir in the chopped nuts or cherries, if desired.
  7. 7
    Quickly drop candy from a teaspoon onto waxed paper, swirling the top of each piece.

    Let cool.

Pretty bad experience, as I was going to take these to a party. When you drop candy from a teaspoon swilring the top of each peice, it just makes a puddle. So I decided to wait a while. Divinity is supposed to have an airy-light quality. This just made a sticky, heavy, puddle of a mess.

    I couldn't wait to try this but it didn't come out so perfect till it cooled off a bit while dropping. The first 10 or so pieces were a puddle and once cooled didn't come off the waxed paper. The next few pieces made were ok, some were flat but harden nice and the taste was great. The last pieces were perfect. My dh suggested I wait a few minutes to drop when the first ones were puddles but I told him the recipe said to drop quick but I should of tried to wait a minute or two. I appreciate the recipe, the taste was delish.

    This is the same recipe I got from my Great Aunt Grethel when I was a little girl. I LOVE IT! It is my favorite candy & the only divinity recipe I ever use because it is the best. Try it, you won't be disappointed!
