Penne Salami Bake

I found this recipe in a Quick Cooking cookbook and it was a hit at a family gathering.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Cook pasta according to package directions, drain and set aside.
  2. 2
    Preheat oven to 350 Degrees F.
  3. 3
    In a large skillet, saute the onion and garlic in olive oil until tender.
  4. 4
    Stir in tomatoes, tomato paste, peppers, salami, olives, salt, and pepper.
  5. 5
    Simmer, uncovered, for 5 minutes.
  6. 6
    Remove from heat and stir in pasta.
  7. 7
    Spoon 1/2 of the mixture into a 2 quart baking dish and sprinkle 1/2 the cheese on top, repeat with the other half of mixture and cheese.

    Place in oven and bake 15 miunutes.

Made this for PAC and it was very very good....I had to leave out the black olives as my better half thinks they are not edible...haha...Great fast dinner!

    This recipe was easy, tasty and very appealing. Wonderful to serve with garlic bread, and/or salad. I used the cheeses on hand: moza and white cheddar. The meat was a salami stick. This dish has Sicilian flavor, and appearance.

    Delicious casserole, although I did make adjustments on mostly all ingredients, I found that I needed to increase the diced tomato slightly (just personal preference) I sprinkled mozza cheese on top of the casserole also. Don't omit the olives in this recipe, it's what makes this sauce! JQ thank you for a wonderful recipe!...Kitten

    Very tasty pasta bake! I slightly browned the salami with the onions and halved the oil, salami is so fatty itself.
