We enjoyed these. I made them twice, back to back, and had different results with each batch. One was very thin while one was much thicker. That said, they all tasted very good. These will be a quick breakfast around here as I froze a bunch for the kids to pull out and eat on the way to school. Thanks!

Yummy, higher protein breakfast that is easy to make. I didn't have a blender so I just mixed with a whisk and they were fine. I found the reviews with the debate over 1 vs 3 tablespoons of baking powder confusing as the recipe as I found it lists the baking powder at 1 tablespoon, that is what I used and they turned out nice and fluffy. I did add a couple of tablespoons for flax seed to add a little fiber, but didn't make any other changes. My daughter ate hers with chocolate chips and honey, I made jelly sandwiches out of my husband's so he could eat them on his drive into work and I ended up eating mine plain with a glass of milk while I cleaned up the kitchen. All received great reviews. Thanks for a wonderful breakfast option.

Dh went nuts over these (pun intended) and I feel good about giving him some protein with his carbs for breakfast. I used the full 3 T baking powder and the pancakes were certainly puffy. The batter did indeed make 16 five inch pancakes. Dh gets a great breakfast for under 200 calories and 10 grams of fat. I froze the pancakes on a tray and then put them in a freezer bag for him. He pulls one out in the morning and reheats it in the toaster. Thank you so much, NurseDi.

These are very good...a hit with peanut butter fans. However....I was hesitant about using 3 T. baking powder to that proportion of flour, so I cut that down to 1 T. They puffed up nice and fluffy. Maybe that was a typo error? They were easy to whisk in a mixing bowl, too, without having to use my blender.
