Peach and Blueberry Casserole

Sounds refreshing - recipe came from Taste of Home 1997 but personally I have not tried yet but with health experts tooting the benefits of blueberry in our diets, time for experimenting.Try serving with ice cream

SERVES 6 -8 , 1 casserole 2qt (change servings and units)

Ingredients

    Place peaches in greased 2 qt casserole.

    Top with blueberries.
  3. 3
    Sprinkle with 2 tbsp sugar and set aside.
  4. 4
    In medium bowl, combine flour,baking powder,salt and remaining sugar.

    Add egg and cut into flour mixture til coarse crumbs form.
  6. 6
    Sprinkle over fruit.
  7. 7
    Drizzle melted butter over all.
  8. 8
    Combine topping ingredients and sprinkle on top.
  9. 9
    Bake 375F for 20 minutes.

    Increase oven temp to 400F and bake an additional 12-15 minutes or til lightly browned.

Karen, this is an easy dessert to make. I used frozen fruit, and the topping was nice and crispy. Of course the vanilla ice cream didn't hurt, either! Will use this recipe again and again. Thanks, Carole in Orlando

    My friends liked this, but then what are friends for? I just did not like not having mixed the crumble on top, it made certain bites less palatable than others

    We made this last night with fresh blueberries and peaches, and it was fabulous. Added some granola and a few pecans to the topping, and served with vanilla ice cream, it was juicy, but everyone slurped it up with enthusiasm.
