SERVES 24 (change servings and units)

Ingredients

  • 8 ripe peaches, coarsely chopped (about 3 pounds)
  • 1 small red pepper, cut into 1/4 inch dice
  • 2 green onions, chopped
  • 1/4 cup peach jam or apricot jam
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil

Directions

    In large bowl, toss ingredients until combined.
