Peach Muffins

Make with fresh or canned peaches. Can be made as a loaf, if desired.

    Preheat oven to 350. Lightly grease muffin tins or greased/floured 9" x5" bread loaf pan.
  2. 2
    In a large mixing bowl, combine the flour, salt, baking soda, sugars and cinnamon. Make a well in the center; add the eggs, oil and vanilla and stir just until dry mixture is moistened.

    Stir in almonds, if using them.
  4. 4
    Stir in the chopped peaches.
  5. 5
    Pour about 1/3 cup of batter into the muffin tins. Bake at 350 for 20-25 minutes or until toothpick tests done.

    If baking in the loaf pan, bake at 350 for 1 hour or until done.

I had some over ripe peaches but they worked great in these muffins. I used 2.5 peaches and made 11 muffins. I did 1.5 tsp of maple syrup instead of vanilla and 1/2 tsp of cinnamon. We all liked them. The next day they were too gooey on top so I put them under the broiler to make the tops dry again. Thanks!

    These are really good moist muffins, I think I might go with half oil and half melted butter next time, I did increase the cinnamon to 1 teaspoon and also the vanilla to 2 teaspoons, I used fresh chopped peaches, thanks for sharing Marcie!...Kitten
