Paula Deen is a wonderful cook. She makes down home comfort food. Everything she makes is mouth watering. This fudge is very good and easy to make!

SERVES 20 -30 (change servings and units)

Ingredients

1 2/3 cups white sugar
2/3 cup evaporated milk
1 tablespoon unsalted butter
1/2 teaspoon salt
1 (6 ounce) package milk chocolate chips
16 large marshmallows
1 teaspoon pure vanilla extract
1 cup chopped nuts

Directions

Combine sugar, milk, butter and salt in a medium sized saucepan. Bring to a boil, cook 5 minutes, stirring constantly.

Add in chocolate chips; cook until melted.

Remove from heat; stir in marshmallows, vanilla and nuts. Mix well.

Pour into a 8-inch pan. Cool cut into squares.

The real trick to this recipe is once you put the marshmellows in the mixture is to stir very fast and get it all mixed before it starts to cool. Immediately pour into dish. I greased my dish with Pam. My Grandmother Weaver used to make this all the time at Christmas and it was such a treat! Thanks Paula. Browns Goodies

I'm thinking we should re-name this fudge, "Paula Deans Stir Until Your Arm Falls Off Fudge. I followed this recipe to the T, and it took me much longer than 5 minutes. More like 30, and I even used my professional counter-top mixer to mix in the marshmallows. Texture is a bit grainy, but I'm a Certified Fudgie from the lower peninsula of Michigan, spoiled by many blocks of Mackinac Island fudge over the years. I want fudge to be soft, creamy goodness... So... because 1. it took much longer than the 5 minutes promised in the title, and 2. because it is a bit grainier than promised, I'm giving it 3 stars. It does taste good, and the real test will be the reaction of my four nephews at tonights Christmas get-together. Thanks for sharing.
