Pasta with Olive Oil And Garlic

This is a fast & economical dish. It is very good. Even when my children & grandchildren were small, they all loved it!! It's an Italian dish that has been around for a very long time.

SERVES 3 -4 , 6 -8 cups (change servings and units)

Ingredients

Directions

    Bring a large pot of water to a brisk boil.

    Add salt.
  3. 3
    Add the spaghetti, following directions on the box.
  4. 4
    Meanwhile, heat the oil in a small pan.
  5. 5
    Slice the garlic thinly and add it to the oil.
  6. 6
    remove the pan from the heat when the garlic turns a pale golden color (do not brown the garlic).
  7. 7
    Add the parsley, salt and pepper.
  8. 8
    Reserve 1/2-3/4 cup pasta water.
  9. 9
    Drain pasta & stir in the oil.
  10. 10
    Add the water if you think the mixture is too dry.

I made this as a side dish to go with chicken. It was delicious! I minced the garlic for more flavor and also added some parmesan cheese.

    An excellent recipe for a fast and yet very delicious meal. I used 3 tbps of garlic since we love garlic and topped my pasta with bacon bits. Very yummy!!! Thanks for posting.

    This is a great recipe. As I like more garlic, you may want to up what the recipe calls for. It would be great with two cans of diced anchovies sauted with the garlic and topped off with grated cheese.
