Fagioli is the Italian word for beans. Serve this classic soup with thick crusty bread for a very wholesome dinner!

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Heat oil in a large heavy saucepan or Dutch oven.
  2. 2
    Add garlic& veggies and cook, stirring constantly, for a few minutes until onions are translucent.
  3. 3
    Stir in spices; add tomatoes with their liquid& concentrated chicken stock that has been dissolved in the boiling water.
  4. 4
    Bring to a boil, reduce heat and simmer for 15 to 20 minutes.
  5. 5
    Add pasta and continue cooking for another 15 minutes, stirring frequently.
  6. 6
    Taste& adjust seasoning.
  7. 7
    Stir in beans& cook for about 5 minutes longer to heat through.
  8. 8
    Ladle into soup bowls& top with a few shavings of Parmesan.

    Fantastic, Delicious, Healthy, and Easy are just a few of the superlatives that describe this hearty soup. I love to make soup and this one is as good as, or even better than any I've made...even my own recipes. I browned some hot Italian turkey sausage and added it in the begining with the vegetables, and at the end of the cooking time, I tossed in a couple of handfuls of baby spinach. I kept the seasoning the same, and it was perfect for our taste. I'm going to pass this recipe on to quite a few of my friends and family, CountryLady. A big thank you for this recipe!

    I followed the lead of Geema and Jill4man in adding Italian sausage. Also, I cut back on the red pepper to 3/4 tsp and the pasta shells to 1 cup. I really didn't measure the veggies so I may have added extra; however, I used 5 cups of water instead of the 3. This was served with homemade yeast rolls for a wonderful meal. Thanks so much!
