This is my son's favorite soup. He thinks it tastes just like Olive Gardens. Never any leftovers with this soup. I hope you enjoy it as much as my family does.

SERVES 4 -8 (change servings and units)

Ingredients

Directions

  1. 1
    Brown the hamburger, drain off the fat.
  2. 2
    Add onion, carrot, celery and garlic and sauté until onion is clear (approx 10 minutes).
  3. 3
    Add everything else except pasta, and simmer on low for one hour.
  4. 4
    Add the pasta and simmer for 5-10 minutes.

    Enjoy.

Wonderful soup and very like the OG. I cooked the noodles separately and added them just at the end. They still seemed to soak up the liquid. I might try steaming the carrots so the soup doesn't have to simmer for so long or add additional broth as has been suggested. Now that this has become a staple, I find that I have decreased the pepper to 1/2 tsp or it is too peppery.

    Very, very good. I used extra hamburger and I think next time I will use extra beans, too. I have already been asked about the recipe by several friends. Thanks for postin!

    Everyone raved that this was better than Olive Garden's soup. I took "Satisfied Kris'" advise and added a can of beef broth. If you plan on eating this a little at a time, I'd not add the noodles right away because they absorb all the juice. Will make again for sure! Thanks

    We loved this dish! Unfortunately there are only two of us, and a recipe like this is hard to do just half of. I figured out that it's best to add the pasta to the individual bowls just before serving, so that I can freeze the rest of the "soup" part. Then I just thaw, reheat and add fresh pasta for a meal next time! I omitted the celery just because I didn't have any, but we didn't miss it! What a wonderful mix of flavors - and I loved the little bite it had to it! I served it with a salad and breadsticks. Thanks for sharing such a great recipe. We will definitely make this again (when we finish the leftovers).
