Pasta Carbonara

This is what we make when we're in a hurry, served with a salad. Not exactly for the dieters, but it does satisfy. 8/24/07, my baby is leaving for college tomorrow and has requested this as her "last" meal. She usually hates pasta, but she loves this dish.

SERVES 4 -6 (change servings and units)

Ingredients

    Bring water in spaghetti pot to boil, then add pasta.

    In large bowl mix raw eggs with cheese, add pepper.
  3. 3
    Brown pancetta in a pan, cut into pieces.
  4. 4
    Melt butter (I use the microwave for the last 2 steps).
  5. 5
    Drain pasta and pour into egg mixture.
  6. 6
    The heat will cook the sauce.
  7. 7
    Add pancetta, butter, and mix.
  8. 8
    Serve with additional grated cheese and pepper.

    Update: This is my DH's favorite dish but since I've gone kosher he has been deprived. I recently found vegetarian bacon tho and now I use it along with a teaspoon of liquid smoke (since the veg bacon isn't as flavorful as regular bacon). Origional review: Yes, carbonara has no cream. If you can find it, try using Quancale (totally spelled wrong sorry). Its the traditional meat used for this and you'll never want to use anything else.

    I've used this recipe several times now and still like it! It is a quick dinner staple and totally no fuss food. This plus a good salad and we are good to go. Thanks for posting it!!

    Very easy and VERY yummy! I added some garlic and onion to the panchetta when it was almost done to give a little more flavor. Definately a family favorite!
