The little new potatoes are so good. We love them this easy no fuss way.

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
    In medium pot, bring 2 qts water and 1 t salt to a boil.
  2. 2
    Cut a ring around the middle of each potato.
  3. 3
    Drop potatoes in boiling water, bring back to the boil.
  4. 4
    Reduce heat to simmer and cook until potatoes are tender, about 10 minutes, depending on size of potatoes.

    Drain well.
  6. 6
    Add butter and parsley.
  7. 7
    Toss to coat well.

mmm talk about easy! and delicious! i don't use butter much anymore so this was a real treat. i used wonderful small white new potatoes and fresh parsley from the garden, it just dosen't get any better than these! thanks for posting.

    I had a stray can of new potatoes in my pantry... who knows how or when it got there!!! I wanted to "spice" them up a little and this recipe was perfect. Who knew a little parsley and butter could transform canned potatoes into an absolutely delicious side dish? I warmed up the potatoes in the microwave first and then drained off the liquid and tossed them in the butter and parsley mixture right before serving. I knew they were good when my BF said they were "delicious" before I even asked!!! I can't wait to try these with fresh potatoes next time! Thanks for sharing!!!

    These are so easy and good. The cooking time makes for perfectly cooked potatoes every time and the bonus is that they look fancy too.

    These are wonderful Inez! I've been making my new potates like these for years. The only addition I make is to add the juice of one lemon. Great recipe! I highly recommend it!
