Parsley and Sumac Salad

A very easy salad, which is a very common salad in the whole of the middle east. The dressing is optional.

SERVES 6 -8 (change servings and units)

    Chop of stems of parsley . Rinse the leaves.
  2. 2
    Bunch parsley up and roughly chop.
  3. 3
    Add parsley to a bowl.
  4. 4
    Peel and slice onion into thin slivers.
  5. 5
    Add onion slivers to parsley.
  6. 6
    Add seasoning, dressing and toss altogether.
  7. 7
    Serve as a salad or with meat dishes, with falafal sandwiches and beef sharwarma sandwiches.

    I made this to accompany grilled chicken and it was wonderful. The only way to describe it is FRESH tasting. So simple to make and a great counterpoint to the rich, grilled meat. I followed the recipe exactly as I found the sumaq added enough tartness with the lemon.

    5++++++++++++++!. Parsley and sumak are mega movie stars! I added a bit more lemon to the dressing because I {{really}} like lemon! thanks for sharing! cg
