Parmesan Roasted Asparagus

This recipe came from Ina Garten of the Barefoot Contessa — she is all about quick and simple but wonderful and fresh food. This is so easy, it has become my standard for preparing asparagus!

SERVES 6 (change servings and units)

Ingredients

    Preheat the oven to 400 degrees.
  2. 2
    Wash and trim the asparagus stalks (I usually cut off the bottom inch or so) Arrange asparagus in a single layer on a cookie sheet and drizzle with the olive oil.

    Sprinkle with salt and pepper.
  4. 4
    Roast for 15-20 minutes until tender.
  5. 5
    Sprinkle with the parmesan and return to the oven for about one more minute.
  6. 6
    Serve with lemon wedges.

Super Easy. Everybody loved this. My non-green-eating son gobbled this and begged for more. We are having it again for dinner tonight.

    Outstanding! I forgot to add the cheese (accidentally) - it was still great. I also used some lemon pepper in addition to the black as I did not have any lemon wedges! I served it with ham on Easter. I had two guests who said they had previously only like asparagus fried - but they loved this and ate quite a bit.

    I added some lemon pepper before adding the cheese. The result was a delicious veggie that was really enjoyed by all. Thanks CarolAnn!
