Parmesan-Asparagus and Bell Pepper

This recipe was found in one of those Pillsbury booklets--Easy Meals for 2. It is very colorful and makes a delicious veggie. It is cooked on a contact grill (George Foreman) and can be easily varied. We really enjoyed it.

SERVES 2 (change servings and units)

Directions

    Heat closed contact grill for 5 minutes.
  2. 2
    In a large resealable plastic bag, mix the asparagus, bell pepper, onion and dressing; coating well.
  3. 3
    When the grill is heated, place half the vegetables crosswise on bottom of grill.
  4. 4
    Close grill and cook 5 to 6 minutes or until vegetables are crisp-tender.

    Place the vegetables in a serving dish and top with cheese.
  6. 6
    Repeat process with remaining vegetables.
  7. 7
    Serve immediately.

    I've been on an "asparagus kick" this week. I pan-roasted these and used a homemade balsamic dressing (honey, mustard) and it went great with the asparagus! Thanks so much Paula. Roxygirl

    I grill peppers and onions as well as asparagus separately on my GF but never thought to combine them. My vinagrette was homemade, balsamic vinegar, olive oil, garlic powder, onion powder, Italian seasonings blend and a smidge of Dijon to bind it. The results were delicious hot and as a room temperature salad for lunch. Thanks Paula!

    We really enjoyed this! So simple and the grilling added a little something special to the veggies! Yum! I only had a green bell pepper so I added some halved grape tomatoes after the grilling and they added great color and flavor too! Thanks so much! We'll be making this quick and easy side dish often!
