Panera Bread Tomato Mozzarella Salad

This was for the Italian category for Zaar World Tour. Haven't made this yet but I have had it many times at Panera and its wonderful. Great when summer tomatoes and basil are bountiful!

SERVES 4 -8 (change servings and units)

Ingredients

Directions

  1. 1
    Cut bread into four wedges, place on plate. Gently toss tomatoes, basil and red onion together. Place 1/4 mixture on each wedge of bread, top with 1/4 of cheese cubes. Pour about 2 ounce of dressing over each.

    Serves 4 or it can be divided to serve 8 as a side dish.

I made this for Favorites of 2009 Tag game...thanks to Kumquat the Cat for putting it in her cookbook! This is delicious! I wish it was summer and I could really enjoy a great homegrown tomato in the recipe!

    We've made this 3 times in the last 2 weeks... FANTASTIC! My favorite salad at Panera, and very easy to prepare at home. Can't wait until summer when tomatoes are plentiful!

    To tell you the truth I never ate at a Panera Bread (none in my town), but this salad was fantastic. Tomato and mozzarella salads are my BF's favoirte and coupled with the focaccia it was fantastic, and a main dish for vegetarians like us - I served it with a side salad. Also I went easy on the red onion and added a bit more cheese. Left the basil off my BF's share (personal preference) but added plenty to my own. Used Quick, Low Fat Balsamic Vinaigrette for the vinaigrette. Made for PARTY game 2009.

    This is a great salad! It's probably my new favorite. The only things I did differently was use a few slices of gluten free french bread since I can't have foccacia, and I left out the red onion because I didn't have any on hand. But I can't wait to try it with the salad when I get some!
