Pan Fried Tilapia

Another very simple recipe...and a healthy one as well.

SERVES 2 (change servings and units)

Ingredients

    Warm up olive oil in a 10" or 12" skillet.

    Mix the corn meal and Old Bay seasoning thoroughly, then spread out on a platter.
  3. 3
    Coat tilapia fillets lightly, but thoroughly with corn meal and Old Bay mixture.
  4. 4
    Lay coated fillets in hot olive oil (medium-medium high heat) and cook until golden on the bottom, then turn fillets over and repeat.

    Do not overcook the fish--it's easy to do.
  6. 6
    While fillets are cooking, combine Miracle Whip, sweet relish, and lemon juice and stir until well blended, then serve with the fish.

    It's quick, easy, and doesn't require a lot of cleanup.

    Steamed carrots or broccoli and some form of potatoes go well with this.

Delish! I would cut he seasoning/cornmeal in half next time. I also substituted the olive oil with canola since olive oil can't handle high heat at all.

    We like tilapia very much but we did not like this recipe. The breading was far too dry and the flavor didn't go with the fish at all. We ended up throwing it away and eating other leftovers instead.

    I loved the crunchiness of this. I spread a bit of mayo on the tilapia before coating with cornmeal and sprinkling on Old Bay. I used significantly less cornmeal than the recipe called for though. (The tilapia filets I bought were very small.)

    The taste was very good and extremely easy to make. Adaptations: *Add more Old Bay. My husband and I agreed that we could barely taste it. *Make less seasoning. I threw over 3/4 of it away. I buy Tilapia individually frozen from Sam's club, therefore they may be smaller, but I still had to needlessly waste alot of the seasoning **Great side dishes: I made steamed brocolli and Taboule (wheat salad). I purchased the boxed kind (brand is Near East) You can find it in the health section of your grocery OR in the dry boxed goods section. I diced up a red pepper. Taboule is high in fiber and compliments the main dish visually, it is very tasty, and easy to make. FYI: directions on the Taboule box say to chill it for an hour or over night. I put it in the freezer while I pan fried the fish. It came out just good.
