Pan-Fried Potatoes With Paprika and Lemon

A nice side dish that goes well especially with German entrees. From Bon Appetit, June 1998.

SERVES 4 (change servings and units)

Ingredients

Directions

    Heat oil in heavy large pot over high heat.
  2. 2
    Add potatoes and saute until beginning to brown, about 12 minutes.
  3. 3
    Reduce heat to medium.
  4. 4
    Add onion; saute until onion is just tender, about 4 minutes.
  5. 5
    Mix in paprika.
  6. 6
    Cook until potatoes are tender, stirring occasionally, about 5 minutes.
  7. 7
    Sprinkle potato mixture with lemon juice and parsley.
  8. 8
    Season with salt and pepper.

Great potatoes! They fried up nice and crispy and the lemon added such nice flavor. We had these with some pan seared trout. Delicious!

    We loved these yummy potatoes: the paprika, lemon juice and parsley made for a great blend of flavours! And an added plus that they were also so very easy to prepare. I cut the potatoes slightly smaller in view of what one reviewer had said about the cooking time needing to be a bit longer. The added advantage, of course, was more crispy outsides which everyone loves! Just had to add some minced garlic - added in step 4 - but otherwise made these exactly to the recipe and won't change a thing when I make these again. On this occasion, we enjoyed these with Chicken With Shitakes and Artichokes (minus the rice!) but they would also be great with any meat dishes, grilled, roasted or BBQ'd. Made for the lazymecookathon May 2009. Thanks for sharing this delicious recipe, lazyme.

    A really comforting potato dish. I served this as a side to smoked sausages and kraut and we were very, very happy. Used smoked paprika (which I love!). This would go great with just about any simply-cooked meat dish.
