Oven-Roasted Sweet Potatoes

This is a recipe that I picked up on a recent trip to Central Market in Dallas, TX. Sounds like a healthy way to prepare sweet potatoes.

SERVES 12 (change servings and units)

Ingredients

Directions

    Preheat oven to 325 degrees.
  2. 2
    Place the sweet potatoes in a shallow roasting pan that has been sprayed with cooking spray.
  3. 3
    Drizzle with the oil, sprinkle with salt and pepper; toss well to coat.
  4. 4
    Place in preheated oven and bake for 30 minutes.
  5. 5
    Add the onions; stirring well.
  6. 6
    Bake an additional 30 minutes; remove from oven.
  7. 7
    Preheat broiler.
  8. 8
    Drizzle the sweet potato mixture with melted butter; stirring to coat.
  9. 9
    Broil 10 minutes or until browned.

This was nice. It could do with a bit more spices, and next time i will take off the skin completely because it dried out a bit with such a long oven time... All in all a great way to prepare sweet potato. Made for ZWT4, for the Tastebud Tickling Travellers.

    These are great! I like to slice them into a french fry shape as well. Good to add lots of spices and garlic too!

    The only change I made to the recipe was to add in some chili powder for a bit of kick. Very nice potato recipe! Thanks for sharing the recipe.
