Oven Roasted Honey-Glazed Sweet Potatoes

Simple yet so delicious, this one of my family's favorite sweet potato dishes and I have made this many times for the holidays and always receive rave reviews! --- If you double the recipe bake in a large roasting pan or use two 13x9 baking dishes, when I am making these for company, I use a large foil pan and just throw the pan away after, saves cleaning

SERVES 4 -6 (change servings and units)

    Set oven to 350 degrees F.
  2. 2
    Pat all the potato cubes thoroughly dry using paper towel/s.
  3. 3
    Arrange the sweet potato cubes (if possible in a single layer) in a lightly-buttered 13 x 9-inch dish.

    In a small saucepan or the microwave stir together butter, honey and lemon juice until butter melts.
  5. 5
    Pour butter mixture over the sweet potatoes; toss well to coat.
  6. 6
    Sprinkle with salt and lots of black pepper.
  7. 7
    Bake uncovered until just fork-tender stirring and turning with a spatula or wooden spoon (about 40 minutes, might take shorter or longer time depending on the size of sweet potato pieces, try not overbake the sweet potatoes or they will be too soft).

After making these tonight, I will definitely make them again, but with a couple changes. I really think the butter needs to be cut in half. My batch was very greasy, yummy but greasy. I also added cinnamon to mine, and it is very important to salt them well. Very good recipe.

    I made this on 11/21/08 to go with some fish that my SO cooked for our dinner.Since there were just the two of us, the recipe was cut in half.After baking I tasted a couple of the potatoes and decided to sprinkle a little cinnamon sugar over them.( After all what's sweet potatoes without a little bit of cinnamon )Thank you for a new way for me to make sweet potatoes. "Keep Smiling "

    These were a very tasty and simple side dish for a weeknight company dinner. (I love that you can cut the potatoes early, toss with the yummy glaze and mostly forget about them while you are making dinner.) I served them with Steak Diane #19464 and simply sauteed fresh spinach. Really great recipe - thank you!

    hubby and i loved this! what an easy and tasty way to eat a veggie...i cut the butter in half and added a generous amount of fresh rosemary. i also added some cinnamon, a little brown sugar, and smoky ancho chili powder. thanks for this wonderful keeper!
