Oven Fried Chicken Fingers

This is a great, healthier alternative to the traditional deep fried chicken fingers. Kids love them!

SERVES 4 (change servings and units)

Ingredients

  • 2 cups Ritz cracker crumbs (about 40 crackers)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup reduced-fat mayonnaise
  • 1 tablespoon milk
  • 1 1/2 lbs chicken breast tenders
  • cooking spray

Directions

  1. 1
    Preheat oven to 450.
  2. 2
    Place crackers, garlic powder, salt and pepper in a large zip top plastic bag. Using a rolling pin, gently crush the crackers to make fine crumbs and set aside.

    Mix mayonnaise and milk in a mixing bowl. Add the chicken tenders to the bowl and mix until tenders are evenly coated.

    Spray a baking sheet with cooking spray. Add about 1/4 of the tenders at a time to the bag of crumbs and shake to coat. Remove the tenders from the bag and place on the baking sheet. Repeat until all of the tenders are coated with crumbs.

    Bake chicken until it is lightly browned and cooked through, about 15 - 20 minutes. Using spatula, remove tenders from sheet. Serve at once, either alone or with dipping sauce (such as BBQ, honey mustard, ranch dressing, etc.).

    Great way to make chicken fingers. The Ritz crackers (I used low-fat Ritz) add a rich buttery taste that was enjoyed by all. I was baking something else in the oven at the same time, so I baked these at a lower temperature (400F) for slightly longer (25 minutes).

    This is probably the best "fried" chicken recipe I have ever had. And, as a bonus, it is low fat. Who could ask for anything more! I make a large batch every time so that we can snack on them later. Thanks so much for sharing this great dish.

    Super recipe! My husband and very picky kids loved it! I didn't have any low-fat mayo, so I used regular and I didn't have any regular Ritz, so I used low-fat. It must have evened out, because they were delicious! Instead of a bag, I used my food processor to crush the crackers and mix in the spices. I just rolled the chicken in the crackers (I hate to waste a bag ). The whole thing took less than 30 minutes from taking the chicken out of the fridge to eating it. Thanks!
