Oven Crisped Potatoes

Nice side dish with meatloaf or hamburgers.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

  1. 1
    Pre-heat oven to 400°F.
  2. 2
    Peel cooked potatoes and dice into 1-inch cubes.
  3. 3
    Place in a oblong baking dish coated with non-stick cooking spray. Sprinkle with green onion, Italian herbs, salt and pepper. Mix gently with fork to distribute ingredients.

    Pour broth over potatoes and sprinkle with paprika.
  5. 5
    Bake on upper shelf of oven. Stir every 15 minutes until browned, about 45 minutes. NOTE: Add more broth if potatoes start to dry out too fast. (but don't get them TOO wet).
  6. 6
    Place under broiler to complete browning. Garnish with parsley or basil and serve.

We loved these potatoes! Did not peel the potatoes before cutting into cubes and doubled the green onions, love them. Boiling them before baking them made for a tender wonderful potato and the seasonings were perfect. Will be making these again! Thank you hon for sharing this recipe with us!     Made these as part of a vegetarian supper, very much enjoyed and so easy to do. I found mine a little salty, but I eat very little salt. Another time I would omit the 'salt & pepper to taste', and just go with the chicken broth. Kept an eye on them to make sure I got beautifully crisp potatoes. A treat for the family, since I do not cook potatoes all the time! :D Thanks, Mikekey, made for I Recommend Tag game.

    Yummy! Definitely worth the little extra work. I added some olive oil to it during the last 15 minutes, as they started sticking to the pan. Absolutely wonderful - change it up a bit - recipe. Thanks for posting. Made for Every Day is a Holiday Tag Game.
