Outback Steakhouse's Alice Springs Chicken

The name says it all.

SERVES 4 (change servings and units)

Ingredients

    Rub chicken breast with Seasonal All and set aside to marinate for 1 hour.

    While the breast is marinating fry bacon crisp and drain.
  3. 3
    Sauté chicken breasts on medium heat in pan with just enough oil to prevent sticking.
  4. 4
    Cook on both sides until a slight golden color and cooked in the middle but not dry.
  5. 5
    Remove from pan and place in a 9 x 13 dish.
  6. 6
    Spread chicken breast with honey mustard, cover with a layer of mushrooms, three pieces of bacon and then sprinkle with shredded Colby/jack cheese, chicken should be covered with shredded cheese.

    Bake at 350 degrees about 15 minutes or until cheese melts.

    Sprinkle with parsley and extra honey mustard may be served on the side.

Loved this recipe! It was so simple. Unfortunately, I had to use bacon pieces instead of frying up real bacon, but it still tasted amazing.

    Excellent recipe! Have made this a few times now I think we enjoy more and more each time. Have made exactly as written and also have added sauteed shallots (with the mushrooms). The shallots add a really nice touch. Thanks for posting a great recipe as it's now one in our regular rotation.

    I used to work the grill @ outback and this is not how you do it. First you Grill the Chickin over flames, then put your Honey Mustard, Mushrooms, Bacon and then Cheese over the top of that. Melt underneath a Salamander which is like broiling in your Oven.. That is how you do it.

    This was great! I cooked the chicken on my George Forman grill, used the outback copy cat honey mustard recipe (#131871), sauteed the mushrooms first & went with the chedder & mont. jack blend shredded cheese and threw it under the broiler for a few minutes to melt everything together. Delish!!
