Our Favourite Lemon Loaf

This is soooo nummmmy!! for lemon lovers. Very good warm or cold. (have been making this for years and cannot remember where it came from, probably from my Mom.)

1 loaf (change servings and units)

Ingredients

Glaze

Directions

    In a large bowl, cream butter and sugar.
  2. 2
    Add eggs, one at a time, beating until creamy.
  3. 3
    Blend in milk.
  4. 4
    In another bowl, mix together flour, baking powder, salt and lemon rind.
  5. 5
    Pour into batter.
  6. 6
    Stir to moisten.
  7. 7
    Scrape into greased 9 x 5 inch loaf pan.

    Bake in 350f degree oven for 55 to 60 minutes.

    Cool in pan for 5 minutes.

    Remove to rack and while still hot, with a toothpick poke holes all over the top of the loaf, and spoon glaze evenly over.

    Cool.

    Glaze: Combine lemon juice and sugar in saucepan.

    Stir and heat till sugar is dissolved.

    Spoon evenly over top of hot loaf.

this is the best recipe I've tried for a lemon loaf. My husband can't stop eating it!!! I added 2 tbsp. of poppy seeds (did it more for the look not so much for taste). One thing, next time I will double the glaze, as we liked how chewy the loaf got on the top because of the glaze! Wonderful recipe and will be a staple in our household! Thank you!

    I made this for breakfast this morning and it was so good. I loved the lemon flavor and it was a good basic loaf. Thank you for sharing this with us, I can't wait to make this again. Yummy.

    Your favorite lemon loaf is now our favorite as well! This loaf has a heavenly flavor and texture. Very lemony and buttery (used butter rather than shortening), and quick and easy to put together with pantry staples. Everybody loved it for breakfast, DH and I also thoroughly enjoyed it with our afternoon tea. Thanks for the delicious recipe.

    This was a very nice lemon loaf. It did seem to me to be more of a tea cake than a quick bread. The glaze imparts an intense lemon flavor which I enjoyed. It did not rise as much as I expected it to, but it remained a nice treat.
