Orange Rosemary Chicken

A full flavored, citrus chicken dish. Perfect for a romantic dinner or a tasty supper.

SERVES 8 -10 (change servings and units)

    Mix undiluted orange juice and honey in shallow dish (If orange juice is still cold when combined with honey, honey will become stiff and not mix well. Warm the orange juice and honey mixture in the microwave slightly).

    Combine bread crumbs, paprika, salt and pepper in a second shallow dish or plate.
  3. 3
    Brush each side of chicken breasts with melted butter (This step may be omitted to make the dish lower in fat. The dish will not be quite as'rich', but will still be full flavored).

    Dip (buttered) chicken breasts into orange juice and honey mixture, coating each side.
  5. 5
    Roll coated chicken breasts in bread crumbs and spices covering each side completely.

    Place chicken breasts side by side, in a large, greased baking pan.

    Drizzle remaining butter and orange juice and honey mixture on the chicken.

    Drain mandarin oranges.
  9. 9
    Place 3 or 4 mandarin orange sections on top of each chicken breast.

    Sprinkle chicken with rosemary (Rosemary may be doubled for those with a preference for a more pronounced rosemary flavor).

    Cover pan with foil.

    Bake at 375 degrees for 50 minutes or until chicken is fork tender.

    Recipe is easily halved for a romantic dinner for two.

This chicken was very moist. Everyone in the family enjoyed it, but commented on the orange flavor as being maybe a bit too strong. I'll definately make it again, but i think i'll add some chopped green peppers and a little fresh ginger next time to balance out the orange. Because changing the sauce recipe would change it's tendency to stay so moist. Oh, and it was even good as leftovers! Thanks for the recipe!

    I thought this was pretty good! I don't think I'm a huge fan of orange, but my family totally enjoyed it. I think this would be a great meal in warm weather, kind of has that tropical feel.

    M H Chef, This recipe sounded so good,and I wanted to try it so bad,that even though I didn't have the chicken breasts I DID have 2 Rock cornish Game Hens,Soooo I used them to make this ,and I was NOT disappointed.They were Oh my Gosh GOOD!!! I'll certainly do this again. Next time maybe I will use the Breasts,I believe it will be just as good. Thanks for a winner, Darlene Summes

    Well the chicken was definitely tender, but the orange was just SO overpowering. Needs something to balance the orange.
