Orange Muffins

These are really yummy! Tender and very moist. These muffins can be frozen. SOURCE: Me

SERVES 18 (change servings and units)

Ingredients

    Preheat oven to 350 degrees, and line 18 muffin cups with paper liners.
  2. 2
    In a large bowl, cream butter and sugar until light and fluffy.
  3. 3
    Add egg, beat well, then add vanilla and mix.
  4. 4
    In another bowl, combine flour, baking powder and salt.
  5. 5
    Mix orange extract with orange juice.
  6. 6
    Add half the flour mixture to the butter mixture, mix well, then add half the juice mixture and mix; repeat.
  7. 7
    Spoon batter into prepared cups, sprinkle with some sugar if you want crunchy muffin tops.

    Bake for 25-30 minutes, until golden brown.

Nice, light and fluffy muffin. I didn't have any orange extract, so my muffins weren't as orange-y as I would have liked. This would be great with cream cheese frosting or dried cranberries!

    These muffins were great. I had wanted to make muffins but I was out of milk, so this was perfect. I didn't have orange extract, but they seemed to be orangey enough without it. Next time I might add orange zest and chopped cranberry.

    My kids loved these muffins! They were full of orange flavor and reminded me of the taste of orange Hostess cupcakes! I will use this again!

    I really enjoyed these. I used orange concentrate instead of orange juice. This upped the flavour considerably I think. Still have quite a few frozen to enjoy later. Thanks najwa
