Orange Date Muffins (Or Chocolate Chip)

These low-fat soft orange muffins are bursting with sweet orange flavour. By far the best orange muffin I have made. The original recipe is for orange date muffins but I often replace the dates with chocolate chips. Dates have been a staple food of the Middle East for thousands of years

SERVES 12 (change servings and units)

Ingredients

    Cut orange into 8 or more pieces, remove seeds.
  2. 2
    Place cut orange into a blender or food processor.
  3. 3
    Blend into rind is finely ground; add orange juice to this mixture to make it easier to grind.
  4. 4
    Add dates (or chocolate chips), egg, and margarine; blend until mixed (if using chocolate chips you may want to add them in step 6 instead of in this step).

    In a large bowl, mix together flour, baking powder, baking soda, and sugar.

    Add orange mixture to dry ingredients; stir gently until just mixed.

    Spray 12 medium-large muffin cups with cooking spray.

    Fill tins 2/3 full.

    Bake at 400F for 15 minutes.

These were excellent. They remind me a lot of these great muffins I would get at the farmer's market in Bloomington, IN. I have really missed them, but these are a close approximation. I did use butter instead of margarine and I added 1/2 tsp of cloves, 1 tsp of fresh chopped ginger, and 1/4 cup ground flax. They turned out beautfully. Thanks for the recipe.

    Wow--these are truly fabulous muffins!! The orange flavor is incredible, the light texture is wonderful, and the level of sweetness is perfect! I used fresh Valencia oranges (from our backyard tree), and removed the pith on the whole one that went into the blender. And I used dates, butter (instead of margerine), whole wheat pastry flour (instead of the w/w and a/p flours), sodium-free baking powder, and added 1/4 teaspoon of salt--all of which worked out fine. This is definitely a recipe I'll make again, and a copy of it is now my best-of-the-best printed cookbook! Thanks so much for a great recipe, LUv 2 BaKE!!

    These are delicious muffins with a wonderful orange presence! I used dates and, except for using butter instead of margarine, didn't make any changes to the recipe. I did end up with only 9, but I must have a habit of filling mine too full because I rarely get a full count with any muffin recipe. We really enjoyed these--thanks for posting the recipe!

    These were light and fluffy and easy and very tasty too! I used chopped dried fruit instead of dates and choc chips, of which I had neither. Thank you for a quick muffin recipe!
