Onion Mushroom Potato Kugel

With Passover coming up, I thought I would add this recipe for some variety to the dinner table.

SERVES 8 (change servings and units)

Ingredients

Directions

    Place potatoes in a large pot and cover with salted water.

    Bring to a boil, then cover and simmer for 35 minutes or until very tender.
  3. 3
    Drain and cool slightly.
  4. 4
    Preheat oven to 350°F
  5. 5
    Heat oil in a large skillet.
  6. 6
    Saute onions over medium heat approximately 7 minutes or until lightly browned.
  7. 7
    Add mushrooms and saute until browned.
  8. 8
    While onions and mushrooms are cooking, cut potatoes into large pieces and roughly mash.

    Stir broth in with potatoes, then add beaten eggs.
  10. 10
    Stir in 1/2 cup mushroom onion mixture, salt and pepper.

    Spoon half of the potato mixture into a 8 x 8 square casserole dish sprayed with cooking spray.

    Top with remaining mushroom onion mixture, then with remaining potato.

    Smooth top of potatoes and sprinkle with paprika.

    Bake uncovered for 50 minutes or until top is firm and light golden at edges.

We made this with some scratch chicken matzo ball soup and this for dinner in celebration of passover. We filled up on matzo balls so much that we only ate a tiny bit. Although a few nights later I turned this into some 'mashed potatoes' and made it into a fabu shepards pie. Thank you so much for sharing your recipe.

    I actually made this as a snack meal. I therefore added cheese to the mushroom and onions. It tasted really nice, so thanks for this recipe!

    Oh yum! Hi Karen, this recipe is awesome! Added some roasted garlic to the dish. Otherwise, I behaved myself and didn't go adding or deleting anything. What can be bad with potatoes, onions and mushrooms. Oops, I cooked the onions until they were caramelized. Thanks so much for sharing, Diane :=)

    I’ve never ever had Kugel. I didn’t even know what it was, but figured this was for PAC so I needed to open my recipe book for something different.. I found Kugel was quite good and easy to make. I’m not a fan of mushrooms but my dh is and I even liked the mushrooms in it. I followed the recipe exactly as written and it was very easy to follow and understand. The flavors together melded well. I think next time I may use a variety of mushrooms and maybe a little garlic as well. Thanks so Much Karen67!
