Olive Garden Copycat Zuppa Toscana

This is a clone of the Olive Garden Zuppa Toscana. Tried and true.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Cook sausage in a 300°F oven for approximately 30 minutes.
  2. 2
    Drain sausages on paper towels and cut into slices.
  3. 3
    Place onions, potatoes, chicken broth, water, garlic in pot, and cook on medium heat until potatoes are done.

    Add sausage and bacon.
  5. 5
    Salt and pepper to taste.
  6. 6
    Simmer for another 10 minutes.
  7. 7
    Turn to low heat.
  8. 8
    Add kale and cream.
  9. 9
    Heat through and serve.

This recipe was the best ever! My DH made it, there is alot of prep, but worth it. Smells like the real thing, and the taste is unbelievable! Thank you so much for posting!

    Thank you!! I am so excited this tastes just like Olive Garden's. I made these adjustments based on other reviews and it was perfect. Remove sausage from casings, break up and brown. Saute onion and garlic in olive oil before adding broth & water. Cook Kale with the potatoes. Break up potatoes a bit to thicken sauce. Used Med onion.

    Well, I guess I should add my rave reviews to all the others. This is AWESOME! My DH swears it is even better than Olive Garden's! I read all 43 review carefully and this is what I did: I used a few more potatoes than called for so it was a little thicker, and I also cut down on the water but used more chicken broth. I cut the kale up into smaller strips and cooked it with the potatoes. I used half sweet sausage and half hot, removed them from their casings, roasted them in the oven then tore them into smaller chuncks. I also precooked the onions and garlic in a little olive oil before adding to the soup. It turned out perfectly! Thank you, Thank you, Thank you, Cycle Michael for this wonderful soup!

    I made this for my father-in-law who loves this soup. It was part of his birthday meal and according to him it really does taste just like the Olive Garden's. I never had the soup before but it was very good. The only thing he suggested was to rough mash a little of the potato to give it a thicker consistency. Other than that he gave it a 5 star rating. Thanks for sharing this recipe.
