Sweet and spicy!

SERVES 4 (change servings and units)

Ingredients

  • 1 (1 1/4 ounce) package taco seasoning mix

  • 8 ounces apricot jam
  • 12 ounces salsa
  • 1 1/2-2 lbs chicken pieces

Directions

  1. 1
    Place chicken parts in crock pot.
  2. 2
    Combine taco mix, jam and salsa and pour over chicken.
  3. 3
    Cook on low 6-8 hours.
  4. 4
    Can also be baked in a 350°F oven for 45-60 minutes.

    We loved this! Using my crock-pot, I cooked (2) right-from-the-freezer, skinless, bone-in chicken breasts on low for 6 hours. Since I used an all-fruit apricot jam, I squeezed in a bit of honey to give the sauce a cling-factor. The chicken was fall-apart tender and the salsa and taco seasoning ( I used Taco Seasoning Packet for the Frugal Home-Maker ) the perfect counterpoint to the sweetness of the sauce. This will be an oft repeated dish for this lazy cook. Thanks for posting!

    I think next time I'll use the oven option. I think the chicken will be moister that way. This is extremely easy and makes a nice meal. Thanks for the recipe, Lorac.

    This was very good.I thought it might be too sweet, but it came out a good blend between sweet and spicy. Once it finished cooking (I used a crockpot) I stirred in a bunch of cooked rice and we used it as burrito filling. It was good with and without tortillas. Next time I'll double the meat and kick up the spice just a tad bit for family's preference. A definite fix again. Yum!
