Old Fashioned Lemon (Citrus) Barley Water

I love this drink so couldn't believe it when I saw it wasn't on Zaar. This is from the back of a packet of Pearl Barley. You can also experiment with a mixture of other citrus juices such as lime or grapefruit.

1 7/8 litres approx (change servings and units)

    Rinse the barley well.
  2. 2
    Cover barley in a pot with cold water & bring to the boil, drain.
  3. 3
    Return barley to saucepan with the lemon rind & 10 cups water, cook slowly for 1 hour.

    Add the lemon juice & sugar and stir until sugar has dissolved.
  5. 5
    Strain and chill to serve.
  6. 6
    Discarded barley can be mixed with some dried fruit & nuts and warm milk and makes a great breakfast.

We love barley water, but this is the first time I've made it at home, and it turned out really well. I reduce the recipe to make one litre bottle. Very tasty! Thanks Mandy!

    I already had my eye on this one when I saw the great reviews and pics from other folks...also I saw Alton Brown make plain Barley water on his show. This was very good. I have been in the habit of making lemonade from scratch lately so this was really one other simple added step. Unique, I like that. I am going to try this out on some friends without telling them what it is. I will also try a sweetener like honey or maple syrup, maybe stevia (for MIL) in the future. Thanks Mandy! Made for ZWT4.

    In an effort 1) to cut down the cost of buying soda at the store, 2) reduce caffeine intake, 3) reduce artificial sweetener intake, and 4) do a bit of research into possible Scandinavian ancient drinks (although they wouldn't have had lemon), I began looking around the internet for barley water recipes. I should've known I'd find a good one right here. The only difference in how I made it was that instead of granulated sugar I used honey. This drink is *well-worth* the very small amount of effort used to make it - I like it a lot better than lemonade, and it's certainly a lot better for you (than soda or other commercially available drinks with all their preservatives, as well). And I have breakfast already prepared for tomorrow morning, to boot! Worth every bit of the 5 stars. Thank you, Mandy!

    WOW! This is FANTASTIC! I made a half recipe to try it out and now wished I made a full one. I'll just have to make it again. I added Splenda after straining it and it turned out with the perfect amount of sweet/tart flavor. I was pleasantly surprised by the honey like flavor of the barley water. This is a keeper. Thanks!
