What a wonderful comfort type of breakfast!!! Just loved the combination of flavors of the onions, potatoes, bacon and eggs, perfect all in one pan meal!!! I did it a little different with the potatoes, in that, rather than boiling them, I just microwaved on high for 2 minutes and let cool a bit, then diced. I cut the recipe in half, but otherwise made a directed. Thanks Andi for sharing the wonderful breakfast recipe that we will be eating often. Made for Holiday Tag!!

Great simple recipe.I added some chopped mushrooms to the mix and an ancho chili powder. Made for Everyday is a holiday tag

I'm not giving this a star rating at this time, because I had to sub chicken breakfast sausages for the bacon, which I think pretty much ruined it. It wasn't awful, but it sure wasn't wonderful. I think, though, that with bacon, it would have been much, MUCH better! So my advice is: use bacon! Real, cured, pork bacon, not turkey bacon, and definitely not sausages. Since DH doesn't eat pork and DS doesn't like potatoes or onions much, I think I'll give it another try sometime as just a quick meal for me, using real bacon. It was easy to throw together. It made a plentiful amount of food, too, and wasn't expensive or time-consuming to put together. Thanks for posting, Andi!

This is a wonderful dish, great for breakfast and hearty enough for dinner. I used fresh small red potatoes and didn't boil them first, just cubed and sauted until they were cooked through. I was pretty generous with my "dash" of Tabasco and didn't use the optional garlic powder. This makes a great meal - thanks for posting the recipe!
