My favorite way to use okra, and besides...it is good. I usually make this in the summer when okra is plentiful, but I have also used frozen okra successfully. NOTE: I should have put this notice here before, but just didn't think! Okra should be chopped by hand. The food processor makes it way to slimey to work with.

SERVES 4 -6 (change servings and units)

    Combine okra, onion, salt, pepper, water, and egg and mix well.
  2. 2
    Mix flour, baking powder, and cornmeal and add to okra mixture, mixing well.
  3. 3
    Heat oil to medium-high, drop okra by heaping tablespoons into hot oil and cook until brown on both sides.

I had about a pound of fresh okra, and wanted to try something other than regular fried okra. The mincing by hand was a bit tedious, but really managed the "slime factor". I enjoyed these little patties. As an experiment, I may try it without the baking powder next time, to see if I get more of the crispy fried okra texture throughout rather than a bread/cake texture in the middle.     Good. I made this gluten and corn free by using double the amount of brown rice flour for the flour and not adding cornmeal (which Im sure is tasty). I had to leave out the pepper because I didn't have any that was ground. I added a big clove of minced garlic to the batter. I fried these in a canola olive oil mix. I can see these being made with zucchini maybe. I served them with taziki (a Greek sour cream, garlic, cucumber dip) They tasted good together. I dont know if I will make this again.

    This is GOOD! I've never cooked okra before. Our neighbor grows it and gave me a huge bag. I had to do something with it, and this recipie has such good reviews, I had to try it. More okra on the table, for sure. I minced about half and just gave up and thinly sliced the other half. I also added some garlic. An outstanding recipie.

    yummmmmmm! Best describes this!! With all the fresh okra available, I wanted to try something different. This taste very much like regular fried okra,,,but less messy with flour/cornmeal stuck on your hands,sink, etc. I followed your recipe exactly and can say I will be making this as often as I can get the fresh okra,,will freeze some okra for winter use too! The only thing I'd change next time is to dice the okra before hand..as it takes a little time to do this. Other than that wouldn't change a thing, but might add a little garlic to it. A very easy, simple to make recipe. Thanks for a "down home" plain 'ole good okra recipe!! Kitty
