Oatmeal Cookies

I love oatmeal and i eat it regulary for breakfast. I sometimes have it even for lunch or dinner and when i am hungry and need something good and that fast i even love more to have an oatmealcookie handy to dip into my latte. If you like you can skip half of the honey and the oil but add 1 cup dark choclate chips or raisins.

12 cookies (change servings and units)

Ingredients

  • 2 cups oatmeal, grinded
  • 1 cup spelt flour
  • 1/2 cup honey
  • 1 cup milk
  • 4 teaspoons oil

Directions

  1. 1
    Blend everything in your kitchenaid.
  2. 2
    Roll balls and press into cookies.
  3. 3
    Bake at 180°C for 15´.

Great cookies! I followed the suggestion of halving the honey and oil and added raisins. Turned out great, I think next time I'll add some cinnamon though =)

    3 1/2 stars. These are pretty dense not to sweet cookies. I used organic gluten free quick cooking oats, Gluten-Free All-Purpose Flour Mix #1 instead of spelt flour, local creamy honey, rice milk as we are dairy free, and canola oil. The batter was quite loose and sticky to roll into balls. I did grease my cookie sheets. These would be good with yellow raisins. I wont make this recipe again as I didnt like the dense texture.

    I made these using whole wheat flour instead of spelt and added dried cranberries to half the batch :yummy: I really liked the honey flavor and the texture, they are chewy like granola bars. Also liked the fact that they are so easy to make. One note though, make sure to grease your cookie sheets well or they will stick. Thank you, Iceland! Made for PAC, Fall '09.

    This makes 12 yummy, very large, and dense cookies! I could not find spelt flour so I substituted with whole wheat flour. I have never had a cookie recipe so simple to make and with minimal ingredients. These tasted like a really good health cookie something a kin to a health bar. Very nice recipe Iceland, thanks for sharing. Oh yea, our kitty 'Joe' loved them also.
