Oatmeal Cinnamon Muffins

Very moist & tasty. I enjoy these plain Hubby likes them with margerine or peanut butter.

SERVES 8 (change servings and units)

Ingredients

Directions

    In large mixing bowl soak oats in buttermilk 15 minutes.
  2. 2
    Stir in egg, Sugar& oil.
  3. 3
    Combine flour, baking powder, baking soda& cinnamon.
  4. 4
    Stir into oat mixture until just moist.
  5. 5
    Fill greased or paper lined muffin cups 3/4 full.
  6. 6
    Bake at 400 degrees 16-18 minutes or until done.
  7. 7
    Cool in pan 5 minutes.
  8. 8
    Remove to a wire rack.
  9. 9
    8- 9 muffins.

Very good and easy to make. I followed the recipe as written other then I used Substitute for Buttermilk for the buttermilk. Next time I think I would add just a bit more cinnamon as others did. We all loved them. I got 11 muffins. Very moist and good.

    These are now a standby in my kitchen. The whole family loves them. I usually add banana and/or cinnamon chips. YUMMY!

    Very tasty muffins! The only substitution I made was to sour regular milk with vinegar and add a tidge extra cinnamon.
