Oatmeal Butterscotch Bars

The first time I made this I ate the whole pan. The second time I made this I ate the whole pan. The third time I made this I told my friends to keep me away from the darn pan and they ate the whole thing. Now we are all really fat and I need 3 new baking pans... =)

    Preheat oven to 350°F.
  2. 2
    Grease a 9x13 pan with butter.
  3. 3
    Combine flour, soda, salt and cinnamon.
  4. 4
    In a large mixing bowl cream butter, then add sugar and mix until fluffy.
  5. 5
    Add eggs and vanilla and beat well.
  6. 6
    Gradually add flour mixture.
  7. 7
    Stir in oatmeal and the butterscotch chips.
  8. 8
    Spread in prepared pan and bake for 22 to 28 minutes.

    If they seem to be getting to brown on the edges, and are still quite gooey in the center lower the oven temp to 325°F for the last 10 minutes or so.

I really wanted to love these and was so disappointed. Sadly I agree with the one other person that they were too dry and brittle. I baked to bring for a family gathering and left them at home as I was too embarrassed to share with others.

    Fantastic!! I made these tonight for a pizza party at my house with my best bud and her kiddos. The only change I made was that I took another reviewer's suggestion and used brown sugar. I found the batter to be really thick but these were the perfect consistency when done. We loved 'em!

    Thanks KMSoprano! I needed something quick and easy for dessert for supper tonite, and this fit the bill. I cut the recipe by half (because if it was as good as everyone said, I knew we wouldn't control ourselves) and I am glad I did. The only thing different I did was add 1/2 teaspoon of butter rum flavoring along with the vanilla. Wonderful! Wanted to add this,,, if you are trying to get some flax seed in your families diet, you can add a couple of tablespoons of grounded , and no one notices.
