Oatmeal Buttermilk Pancakes

    Mix oats and soda to buttermilk.

    Let stand 5 minutes.
  3. 3
    Sift together flour, baking powder, salt and sugar.
  4. 4
    Add sifted dry ingredients, shortening and eggs to oats mixture.

    Stir until combined.

    For each pancake, pour about 1/4 cup batter onto hot, lightly greased griddle.

    Bake to a golden brown, turning only once.

    Serve hot with butter and syrup.

Was looking for a way to use up some buttermilk. These tasty pancakes paired with Buttermilk Syrup did the trick. Froze the left overs and reheated in the toaster oven - great for a weekend breakfast without needing to make up a whole batch of pancakes.

    This recipe works! I used 1 cup of White Lily all-purpose flour, only 1 tablespoon of sugar and added a bit more than 1 teaspoon of vanilla extract...light pancakes plus the texture of the oaks were so delicious....I do like the idea of using whole wheat flour to be 100% whole grain as well. I froze mine individually on cookie sheets lined with wax paper. Nuking in the microwave produced great results for an instant breakfast!!!

    I love these pancakes! The only thing different is I use a tablespoon of sugar instead of 2 tablespoons. They're nice and filling unlike your traditional pancake. I rarely have buttermilk, but I just throw a splash ov vinegar to the milk. It works great. Thanks!

    I made these for brekky as I had so0me buttermilk to use up. These were nice but the oats made them quite heavy, I soaked them for about 30 mins, perhaps I should have soaked them longer, don't get me wrong we all enjoyed them but the end result was quite a dense pancake. Thanks for posting!
