This is a vegan parmesan cheese substitute. Do not expect an exact replacement in taste - if you do you will be disappointed. However if you use it thinking that it is something that can be used in a similar way, you may be on to something...

1 jar (change servings and units)

Ingredients

Directions

  1. 1
Grind all ingredients in food processor or blender until completely milled.
  2. 2
Store in glass jar in fridge for months[if it lasts that long].
  3. 3
Use over pasta, sprinkled over salads, or in any recipe where you would use parmesan cheese.

I tried this on spaghetti. To me it did not taste any different from just using plain nutritional yeast.

You have just improved on my favorite popcorn topping. I always make popcorn, bake it in a low 200 oven for at least a couple of hours, then sprinkle on olive oil and lots of nutritional yeast, and a little salt. Now I'll have a nice jar of this delicious stuff to make the popcorn even better. Thanks.

Missy, I KNOW this is SO healthy, and I wish with all my heart I could like it. But I just could not embrace the taste. I tried it on popcorn, potato wedges and pasta, but it was not for me. I am glad you posted it, though — it introduced me to a new food. I have been "hiding" the yeast in my morning smoothies since it is so very rich in nutrients.
