Not Your Usual Chile (Mole Based)

I am a huge fan of Iron Chef and they kept making mole, so I just had to come up with a recipe for myself.

SERVES 6 (change servings and units)

Ingredients

    Brown hamburger in stock pot.
  2. 2
    Add garlic and onions and cook until translucent.
  3. 3
    Stir in cocoa, cumin, hot sauce and salt and stir until well dispersed.
  4. 4
    Add tomato sauce and beans and mix thoroughly. Add coffee.
  5. 5
    To cut bitterness of coffee, add 1 T of sugar or more depending on how strong you make your coffee.

    Check flavor of chili. I like mine spicy, so I usually forgo measuring and just dump in as much cumin as possible. Makes a very meaty, manly chili.

what a great recipe, although i played with the recipe ALOT! i would recommend doing it by taste, as there's certain things that make differences, like if you use sweetened or unsweetened cocoa. as far as the changes i made, for starters, i'm allergic to coffee of all things, so i added beef broth instead. while i was cooking, and sampling of course, it wasn't chocolatey enough, and it was missing that good 'nutty flavor' that mole usually has, which may have been the problem with not using coffee. so i added a couple of tbs of peanut butter and probably almost 4 more tbs of cocoa with corresponding sugar,as i was using unsweetened. well that made it bitter so i added more sugar,i think at this point i was probably close to half a cup or more of sugar. i also dumped in a bit of cinnamon as well, maybe 1 tbs, as i love when mole has that cinnamon flavor as well. and i probably doubled the rest of the spices that the mole called for. sorry the measurements aren't more accurate, but i do everything by taste. the texas raised husband wasn't crazy about an 'impure' chili, as to him chili should be chili, and there aren't any beans in chili. but i absolutely LOVED it and plan on making it again. maybe next time i'll remember to measure stuff, so i can pass on the recipe!
