Norwegian Stuffed Eggs

Prep time does not include hard boiling the eggs. Whenever I've eaten these, the eggs were sliced the short way. I can never get them to stand upright, so I slice them lengthwise.

SERVES 16 (change servings and units)

    Cut the eggs in half lengthwise.

    Remove the yolks and set egg whites aside.
  3. 3
    In a bowl, mash the yolks. Add in the chopped smoked salmon, butter, sour cream, cheese and dill; mix together well.

    Stuff the egg whites with this mixture.

These are great, especially if you love the taste of smoked salmon. But we recommend eating them the same day, the day after they had kinda dried out some.

    I was trying new appetizers for my Christmas buffet so only did half the recipe and yep, this one made it! The mixture was on the dry side so I added half tablespoon of sour cream. Thanks for sharing!

    These eggs were terrific & another 5* from me too, Parsley I made a half recipe for 2 of us as written & felt the mixture was a bit dry so I added a sml amt more of the butter & sour cream, but that may have been because my eggs were quite lrg. To add a color variant for the pic & dress them up a bit, I topped them w/3 sml capers & a tiny sliver of smoked salmon. W/eggs hard-boiled as the start, they take only minutes to make & are a new way (but classic as well) to enjoy our wealth of smoked salmon here in Iceland. Made for Photo Tag & thx for sharing this recipe w/us.
