Noodles and Tomatoes

My grandmother started making this dish for us when we were kids. That was quite a few years ago! She once commented that she must have made a dump truck full of macaroni for us. I still make this — it's comfort food for me. This is a very butter/tomatoey dish. It's not spicy and meant to be bland so that the creaminess of the butter, the tang of the tomatoes and the flavor of the pasta shine.

SERVES 4 (change servings and units)

Ingredients

  • 2 cups prepared pasta (I prefer egg noodles or elbows)

  • 1 (14 ounce) can crushed tomatoes (you can use whole tomatoes as well and just moosh them up)
  • 2-3 tablespoons butter
  • salt
  • pepper

Directions

  1. 1
    Prepare the pasta according to pacakge directions and drain well.
  2. 2
    While the pasta is draining, melt the butter in the pasta pot.
  3. 3
    Add the pasta back to the pot, mix well.
  4. 4
    Add the crushed tomatoes, mix well and serve.

My hubsand and kids loved it. Reminded me of Spaghetti-O's, both smell and taste and I was turned off.

    Being from the South, we use bacon grease instead of butter. Try it!!

    This is one of those combinations I wish I did not know existed. Denise told me about it and I made it Saturday. In one 20 minute span, I ate (just me) 3/4 of a pound of ziti, half a stick of unsalted butter, and almost the entire large size can of crushed tomatoes. I also sprinkled a bit of seasoned salt over the top. I couldn't stop - who knew that butter & tomatoes belonged together???? YUM!

    Doesn't get much more simple than this. Tastes great, too! Due to pantry limitations, I ended up using diced tomatoes (Italian) in lieu of crushed and added a little garlic powder. Simmered butter and sauce together for a bit before adding to whole grain fettuccine and topped with Parmesan cheese. Everyone in the family loved it (teenager and preschooler, included). Perfect for busy, week night dinners! Thanks for sharing!
